Black Bean Burgers

Quick protein patties you can dress up with veggies and your favorite hummus


I’ve been making black bean burgers for a long time. They are a really easy way to get a quick, protein filled dinner! I’ve added all sorts of different vegetables to them and you can play with the spices as well! This version goes particularly well with my pepperoncini hummus. Enjoy!


Serves 2


Ingredients


1 can black beans, rinsed

1 egg

½ small onion

½ cup bread crumbs

1 tsp garlic powder

1 tsp salt

Pepper to taste

2 Tbsp olive oil


Instructions


1. Rinse 1 can black beans and transfer to a medium sized bowl. Mash with a fork.

2. Finely chop onions and mix with beans. Add egg, bread crumbs, garlic powder, salt and pepper to taste. Mix until everything comes together.

3. Add olive oil to skillet on medium heat. Form bean mixture into 8-9 patties and fry about 5 minutes on each side or until golden brown and hot all the way through.

4. Serve on pita’s with veggies and my pepperoncini hummus.
