Breakfast Tacos with Cilantro Mint Salsa

Breakfast --> or lunch/dinner/snack tacos!


Taco are delicious any time of the day. These breakfast tacos have black beans, roasted sweet potatoes, fluffy scrambled eggs and cilantro mint salsa to top them off! Skip the taco part and just make it a scramble :) read more about the benefits of cilantro on my salsa post here.



Makes 10 tacos


Ingredients

1 cup black beans

1 cup sweet potato, cubed

1 tsp olive oil

Salt to taste

10 eggs

1 Tbsp butter or oil

Salt and pepper to taste

10 small white corn tortillas


1 cup cilantro mint salsa:

Bunch of cilantro

1/2 cup mint

1 jalapeno

2 cloves garlic

Juice of 1 lime

1/3 cup olive oil

1/4 cup water

1/2 tsp coriander

1/2 tsp cumin

Salt to taste


Instructions

1. Preheat the oven to 375 degrees Fahrenheit. Cube sweet potato and add to a bowl with oil and salt. Place on a baking sheet and roast for 15-20 minutes, tossing halfway.

2. While the potatoes are cooking, prepare the salsa by chopping the first four ingredients by hand and mixing in the rest until it becomes homogeneous. Or place everything in a food processor and process until smooth (which is what I did here)

3. Drain the beans and set them aside.

4. Heat the butter or oil over medium-low heat and crack the eggs into the pan. Mix with a spatula until cooked to your liking.

5. Prepare your tacos with all the fillings and top with salsa!
