A great dressing to add to your rotation!
As with all salads, this salad is super versatile. The charred lime vinaigrette brings a ton of flavor and complements any salad add-ins. I charred my limes on a grill, but you can accomplish the same result in a pan on the stovetop as well. Toss all the vegetables with some lettuce and dressing and you have a really tasty side dish or main meal. Enjoy!
Makes ~ 3 cups dressing
1 ¼ cup olive oil
1 Tbsp rice wine vinegar
1 Tbsp pure maple syrup or honey
1 ½ shallots, finely diced
Salt and pepper to taste
1. Preheat your grill to medium high heat. Slice limes and place flesh side down on the grill. Grill until flesh has caramelized and there are grill marks. About 10 minutes.
2. Allow the limes to cool.
3. Finely dice shallots and add to a bowl with the olive oil, rice wine vinegar, and maple syrup. Squeeze all the juice from the limes through a sieve and into the bowl.
4. Season with salt and pepper, whisk to combine.
5. Add to salad etc.
