Espresso Spiced Nuts

These nuts are the perfect afternoon snack! Raw almonds and cashews are given an upgrade with maple syrup and an espresso spice mix. You can take it even further by adding in a greater variety of nuts, double the recipe and add hazelnuts and pecans. You won’t be disappointed. This recipe makes a lot of extra spice mix so you can repeat it or use it in any other savory recipe! I’ve repeated it so many times already :)

Yields: 2 ½ cups

Espresso spice mix

¼ cup espresso powder

1 Tbsp ground black pepper

1 Tbsp garlic powder

1 ½ tsp cinnamon

1 ½ tsp cumin

1 ½ tsp cayenne

1 ½ cups raw almonds

1 cup raw cashews

¼ cup maple syrup

1 ½ Tbsp olive oil

1 ½ tsp espresso spice mix

Preheat the oven to 325 degrees F. Add all the ingredients to a large bowl and stir to combine, making sure all the nuts are covered. Bake for 30-40 minutes mixing every 10 minutes. Keep an eye on it the last 10 minutes because the maple syrup can burn quickly! Allow to cool and break apart any stuck together pieces. Store in an accessible container, you’ll want to keep going back!
