Pair this salad with anything and everything!

My mom would make this salad every night with dinner. Even on pizza night, each of my siblings and I would get a small saucer of salad. My favorite part was the olives! And that was possibly the only reason my dad would eat it ;) Very simply it includes lettuce, red pepper, carrots and green onions. Finished with olives and avocado and a homemade italian dressing. Sometimes she would change it up with a vinaigrette but I always liked the italian the best! Make it a meal and add protein or have it as a side with your favorite dinner!

Makes 3 medium salads
Ingredients
4 cups green or red leaf lettuce (or your preference)
1 red bell pepper
1 bunch of green onions
15 baby carrots
10 pimento olives
Half an avocado
Italian dressing - makes about 1 cup
½ cup olive oil
¼ cup apple cider vinegar
2 Tbsp water
1 tsp honey
1 tsp lemon juice
1 tsp garlic salt
1 tsp dried parsley
1 tsp dried basil
½ tsp dried oregano
Pepper to taste
Instructions
1. Chop vegetables to your size preference (I like small) - stack lettuce leaves and chop, cut the bell pepper in strips and then cube. Line up a couple carrots and cut into rounds. Cut the whites of the green onions (can add more of the green if you prefer).
2. Make the dressing. Add all ingredients to a jar with a lid and shake to combine.
3. Add the avocado (cubes) and olives to the bowl and pour over dressing. Mix to combine and serve.
