This quick bread is filled everything under the sun, including whole wheat flour and oat flour!
This bread is perfect for breakfast. I’ve been having it every day this week with peanut butter! It has apples, carrots, golden raisins and shredded coconut. You can’t possibly get bored with this bread. It has a mixture of whole wheat and oat flour to make it even more nutritious. Oats are incredibly good for you, in the book Oat Nutrition and Technology, author YiFang Chu talks about the importance of consuming oats, “oats (Avena sativa) are one of the major important whole grains in the human diet. Oats are good sources of fibers, minerals, vitamins, and phytochemicals, including phenolics, β-glucan, avenanthramides, vitamin E, lignans, and phytostanols” (172). β-glucan provides a lot of service to the human body, “the major health benefits of oat β-glucan include lowering blood cholesterol levels, controlling blood sugar, and enhancing the immune system” (Chu 177). Not only that but authors, Victor R. Preedy, Ronald Ross Watson, and Vinood B. Patel in their book Flour and Breads and Their Fortification in Health and Disease Prevention, speak on β-glucan, “research on oat (A. sativa) has increased in recent years because clinical studies have shown oat β-glucan to reduce serum cholesterol levels and attenuate postprandial blood glucose and insulin responses in a viscosity-related manner” (156). It would be beneficial to add oats to your diet!
In addition to the nutritional benefits of oats, they also taste really good! Traditional oatmeal is a common way of consuming oats, but using oat flour in non traditional recipes has become more and more popular. Researchers tested oat flour additions to pasta in the paper, “Cooking Quality Characterisation of ‘spaghetti’ Based on Soft Wheat Flour Enriched with Oat Flour” by authors Teresa De Pilli, Antonio Derossi, and Carla Severini. They were looking to increase the benefits of pasta to the consumer, “the aim of this work was to optimise the formula of spaghetti enriched with oat flour without compromise the cooking quality by means of drying with high temperature (2). They found that the oat flour was in fact a positive addition to pasta, “we can affirm that it is possible to improve the nutritional quality of pasta using oat flour without compromise its cooking quality. Nevertheless, further studies are necessary to better understand the sensorial characteristics to evaluate potential consumer acceptance (Pilli 6). Try out this Morning Glory bread with oat flour and then maybe some oat flour pasta! I know I’ll be looking for it.
Makes: 1 loaf
½ cup raisins
1 cup carrots
1 green apple
1 cup whole wheat flour
1 cup oat flour
½ cup brown sugar
2 tsp baking soda
2 tsp ground cinnamon
¼ tsp ginger
½ tsp salt
½ cup shredded coconut
¼ cup coconut oil
2 tsp vanilla
¼ cup almond milk
1. Preheat the oven to 375 degrees Fareinheit. Grease the bottom of an 8 by 5 inch loaf pan.
2. Shred the carrot and apple and set aside. Pour boiling water over the raisins until covered and let sit.
3. Combine both flours, brown sugar, baking soda, cinnamon, ginger and salt.
4. Add eggs, coconut oil (melted), vanilla, and almond milk. Mix until combined.
5. Add the carrots apple and shredded coconut. Mix until combined.
6. Pour into greased loaf pan and bake for 50-60 minutes or until toothpick comes out clean.
