Roasted Walnut Salad

Simple side salad to pair with lunch or dinner.



The walnuts in this recipe are roasted with paprika and honey. They are tossed with lettuce and cucumber and that’s it! I use this as a side salad but it would be great with grilled chicken or roasted carrots etc. Your options are limitless. Best served with my Orange Chive Salad Dressing found here.



Makes 2 side salads


Ingredients

½ cup walnuts

1 tsp paprika

1 tsp honey

1 tsp olive oil

Salt to taste

2 cups greens

½ cucumber sliced


Instructions

1. Preheat the oven to 350 degrees Fahrenheit. Toss the walnuts with paprika, honey, olive oil and salt. Set them on a baking sheet and toast for 5-10 minutes.

2. Toss the lettuce with cucumbers and cooled nuts. Top with dressing and serve.
